Pinoy History on a Plate
Owned by the famous Chef Florabel Co. The restaurant claims that it reintroduces turn-of-the-century Filipino cuisine and infuses it with the features of a modern Filipino kitchen. Crisostomo is a Filipino restaurant that pays tribute to the cultures that have influenced our national cuisine: the colonizers — Spanish, American and Japanese — and the Chinese, plus Florabel’s own touch. Crisostomo was not named after Rizal’s protagonist, but after her husband, Christopher . Chef Florabel used the name Crisostomo, after Crisostomo Ibarra,the lead character of Dr. Jose Rizal's Noli Me Tangere to create one of a kind turn of the Century Filipino dishes. This was one of the two novels (the other being El Filibustero) that the country's national hero wrote as a protest against the Spanish friars who ruled until the latter part of the 19th century. The names of the dishes on the menu were pretty much derived from fictitious characters from the novel. Monikers like Tinapa ni Tiburcio, Elias' Choice, Tadyang ni Tiago, Atchara ni Ibarra and Adobo Damaso lend an amusing personality to each dish.
